A 28mm diameter hole works nicely.

Q: Can anyone tell me how to set this up with the raspberry pi pins?

you need to use an analog to digital converter, as the RPi can't use analog signals. I found and plan on using this sometime(though I'd still recomend looking around some, but Adafruits pretty good)- https://www.amazon.com/Adafruit-MCP3008-8-Channel-Interface-Raspberry/dp/B00EU1PY06/ref=pd_bxgy_23_2?ie=UTF8&psc=1&refRID=QKDJ1R0FRS743VAR3QVW The button, however can hook up, but make sure to find the right progam, otherwise you can mess up your Pi pretty bad(Oh, this also goes for the signal after the converter).

It does not. Search Amazon for a spring return joystick.
